I make crab cakes a few different way but my favorite is with an Asia twist.
Lump crab meat, Pablo, egg, mayo, lemon juice, lemon zest, sesame oil, sriracha, green onion, and salt and black pepper. Mix everything together gently. Coat again in Pablo and shallow fry. Delicious!
Around here, we have the Dungeness crab and red rock crabs. The Dungeness crab is the most prized because of their size and meatiness. However, there are strict size and sex limits, so its sometimes hard to find a lot of "keepers" when you are crabbing off a pier:
If you go crabbing in Yaquina Bay, you can almost always come back with a cooler full of red rock crabs. They are generally smaller than the Dungeness and harder to clean, but the meat is just as tasty. There are no sex or size limits on the red rocks, but I generally keep only the biggest ones:

I went to college on the Eastern Shore of MD and they served crabs and crab cakes in the freaking cafeteria on the reg (in season of course). I can remember crab feasts with ENORMOUS crabs for a $5 buy in that included beer.... shitty beer but beer nonetheless. #rivercrabsorstfu
I did love discovering Dungeness during my time in SF. You could get them at the oriental grocery for $5 a piece.... yuge ones. Pretty sure those times have changed.

Proper seasoning - usually Old Bay or some variation - and cold beverage are pretty important.
"Local" crabs have been running pretty good at the nearby semi-suburban outlets that don't import them from out-of-state (like they need to do in the off season).
Agree. Actually, thinking about it I think crabs might win, since lobster typically only tastes like...lobster, while I find more taste variety in crabs. Maybe one should consider the work/ meat ratio plus take into account the sweet/ succulent index

But most people around here can open them with ease -- it's one of the things you learn as a kid.
