if it's going to feel more like a man than I do. Really, I have no interest in feeling like a man at all.

I do like slowly braised short ribs, though. Shit, now I have to figure this out?

Those shows I had to cringe while force swallowing that wretched tasting stuff, I think is to blame.

Pretty good looking, but I would add some veggies.

I am taking the lady out to our favorite little French/southern joint. Duck Wellington. It is beyond amazing.

 

Let me know how that works out, Timmy. I've tried a few lemon pasta recipes and they're always too greasy, cloyingly cheesy, or too sharp. Can't seem to get the balance right. I hope this is a good one that I can copy

 

I agree with Joe, some veggies for color or maybe sliced grilled chicken would pretty up the plating.

A basic lemon pasta recipe doesn't work for me either.  I wouldn't use a stick of unsalted butter on my worst enemy. Olive oil or sea salted butter & garlic would help this dish.

Making my own noodles and adding clams.  I'll report back on how it turns out.

Well, copy this one. It was really good.  Super lemony, not greasy at all (could be due to using fresh noodles), and just a little cheese grated on top.

You might if you want them to become your best friend.  Seriously, I had second thoughts about the unsalted butter but the sauce was really good.  I did take your advice and added some chopped parsely, no oregeno as I didn't have any fresh.

 

I did alter the recipe and made it super simple.  For the sauce I just used 2 Tblspoons of Olive Oil, heated it until almost smoking, added red pepper flakes and cookd for a few minutes added juice and zest of 3 lemons, brought to boil, remove from heat, stir in stick of butter.

Then cook the pasta and drop it in the sauce spin it around a bit and serve with some grated parmesan reggiano.

 

I know it was good because my wife wants to invite everybody she knows over to have me cook this for them.  She's the real foodie and better cook than me but she had super high praise of this one.  Said it was like a concert in her mouth.

That would totally ruin a delicate amzing pasta dish but I'm not surprised at your terrible suggestion.  Possibly a side of asparagus but that's pushing it.  It really is a stand alone dish.

A few years back I bought a $40 pasta maker --- crank cutter w/3 settings. Spaghetti, Fettuccine and parpadelle.  Easy to clean and does the job.

Yeah, we got one for Christmas.  I was surprised at how easy making pasta is.  A little messy and time consuming, but easy.

Well worth the effort. I could eat fresh pasta daily. 

Even easier is ricotta gnocchi.  I can make a few pounds in 10 minutes.  A quick Alfredo, maybe some procsuitto and you're good to go.

You ever try your hand at Ravioli Hoover? There is so much you can do from squash to cheese. I like to bread them and fry them, the. Your favorite sauce and EAT.

I make the sauces at one of my places of work. I am very close to bottling and selling.

Cooking is so much trouble, especially if it's just for me.

I try it now & then but I just can't get into it, and then there's a mess to clean!

I spend hours a day cooking and cleaning up after.  But I eat well. And healthy(but not low calorie). Hard to get good organic food if you don't cook it yourself.

Have never been a fan of ribs ... although compared to most meat dishes, ribs "are what they say they are".

WTF is a "hamburger", "hot dog", or "taco"?

a hamburger can be ground up short rib, brisket, dry aged whatever, etc. it's not just mystery meat, although it certainly can be (mechanically separated junk) if you purchase a burger at say a mcdonald's or equivalent. 

a hot dog can be the same actually - good sausage or nasty. 

now you also added taco -- which isn't a meat.

mechanically seperated beef has not been allowed in food since 1996 due to concerns over mad cow disease. pork and poulrty are still used and sold, but there are no burgers in the country that use mechanically seperated beef.

It was awesome but was missing fresh parsley & basil(a culinary herb of the family Lamiaceae).   A little on the spicy side for the kids but perfect for me.

   

I have Bearnaise sauce leftover from something I made for Xmas.  I'll use it for tonight, making EU organic Atlantic salmon with cauliflower. 

Love a good bearnaise but hasn't it separated already?  Not sure if it's good for that long.  

Not big on salmon --- have had it plenty of ways but haven't found one that I can take more than a few bites of.  

 

I've got a chicken and corned beef to cook up this week, help warm the house up...  haven't decided on recipes yet.  


Chicken dumplings tonight for me.  

The only thing I need with crock pot corned beef is a fork and that's even optional.  Rye bread and mustard if im feeling adventurous.   Damn, now I need to grab a corned beef this week.....

So . . . dinner will likely be taco cart, Halal Paradise, or possibly something from the new Urban Space food court down the block.  They close at 10 are are supposedly on the spendy side, but it's indoors, which is a factor tonight.

Raw bones are best for bone broth also.

but for a quick liquid based dinner, where the stock is the star, i'm roasting the bones for that deep intense best flavor color texture. 

Raw is okay for chicken bone broth, but beef bone broth has a fuller flavor if the bones are roasted for an hour first.

Might taste better, but nowhere near the nutrients.

 

Isn't the key to the nutrients putting vinegar in the cold water? It pulls the minerals out of the bones.

I don't know, I can't see how a 45 minute roast will degrade the nutrient profile, when the bones are then simmering for 48 hours. That's where the nutrients are pulled out.

But they are pulled out by the broth, where they stay until you drink it.
