Found some leftover roast beast in the freezer... decided to slice it up, then force it into a relationship with sautéed onions and bell peppers, add hoagie roll, and there's a Cheesesteak in the makings... the questions were, what kind of cheese(s), and what kind of sauce(s)??? Decided to go with Swiss and Cheddar, and for a sauce had mayo and Tostitos salsa con queso, pepper, garlic, herbs, etc... (wish I had some jalapeno cheese but was out, drats!)
