Heading to my brothers tmrw for shrimp cocktail, beef carpaccio, ham, tortelini , all kinds of veggies, and desserts galore...

 

And for me, massive amts of coffee, im sure...

I'm preparing to make my first roast beast au jus tonight, a beautiful piece of local beef, along with roasted herbed potatoes, asparagus, and Yorkshire pudding.  I reeeally hope I don't fuck it up, it'd be an expensive mistake.

 

To cook the roast beast you need to cook it at a higher temp for 20 minuets and then drop it down the temp. MAKE SURE you turn thw temp. down properly. A while back I dropped but did not push set on the stove and it cooked away for 3 hours before I realized it was 450 the whole time.

My wife does not like medium much less rare like the way me and the boys do. She LOVED it that night. It was a gray pot roast.

today will be mainly fish/Italian leaning noshes - crab cakes, mussels marinara, stuffed squid, stuffed clam, spinach and mozz roll, meats and fine cheeses, i have a bottle of Angels Envy Rye, rum cask edition...will probably listen to an Elvis Xmas record then watch Elf and Bad Santa and It's a Wonderful life ( if you look closely you might see me mist up at the end of it )...

Tomorrow breakfast is Blueberry pancakes with bacon and sausage and a bottle of Velvue Clique

Dinner is more Italian - caprese salad, stuffed shells ( i have fresh mozz and fresh ricotta for this ), beef braciole, garlic and broccoli rabe, hot, and sweet sausages, meatballs, angel hair, asparagus, spinach, home made garlic knots

desert is Almond Tiramisu and tri color cookies 

Well, its time to start making the gravy and the noshes and maybe even the shells today....

now to select todays kitchen prep music....

marinara is resting - crab cakes are on the one hour set, mussels are washed, pre-cooking/party fatty is rolled - have some Zappa on the turntable - YES on vinyl - house is empty, alone for the next 2 - 2 1/2 hours and all my wrapping is done....feeling pretty good for early Xmas eve ...

Wife is working, table for 1 tonight at the Chinese restaurant, had general tso's chicken, lo mein and a egg rollwink

total can haz to the maxxes......

Our plan was to go straight from picking up Da Boy at NWK to the Cuban restaurant, but we found out they were closing too early.

So Lil made Jambalaya.

The chorizo was judged to be substandard and did not gain entrance, but otherwise, a kick-ass batch.

Trader Joe's cornbread did not suck, either.

Cubensis played a free show at the San Manuel Casino tonight. I had calamari(best source of Omega 3s).  Tomorrow(Or today I guess) back to wholesome organic food prepared by me. Nothing special. Finished off the collard greens when I got home tonight.
