The easiest way to shuck corn is place a couple of ears in the microwave for 7 minutes & then husks & silks fall off. You will hae it clean in 15 seconds.
Now it is ready to eat. This is better than boiling it as do not lose any flavor,, etc,. in the water.
You can butter && salt it or whatever. You can also put it on the grill if you like it charred.
Another thing is to make Cheelotes. Elote is the Mexican style corn on the corn you see in corner sidewalk stands depending on where you live.
Elote is roasted corn on the cob that is slathered with Mexican Crema & then covered with chile pepper & grated cheese & lime juice.
Cheelotes is when you take a large party size bag of Cheetos & crush the contents into a powder & the put you slathered corn in the bag & move it around. The crushed Cheetos with their crushed hot peppers & lime & cheese with adhere to the cob.
5 gallon bucket with water and salt in it. Throw in corn, husk and all, and let them soak. Throw them on the grill husk and all, old fashioned micro-wave method. Cut stalk side and squeeze husk, and corn will slide out clean the other end.
1 gallon pitcher of hot water, throw in half stick of unsalted butter, half cup of lime juice, tablespoon of minced garlic. Butter melts and floats on top of water. Destring raw, uncooked corn on the cob, keeping the husks for a handle. Immerse cob completely in water; butter and flavor stick while pulling out of water. Enjoy.
Best variety I've ever eaten was a bicolor called Seneca Select.
I remember as a teen plopping our asses on the dirt in the middle of the corn patch after picking a load for the country store and consume it raw. We'd come out of there all sweating and covered in pollen then hit the nearby flooded stone quarry for a dive, dip and cleanse. Then when I got out west I got into farming/ranching and grew 60-180 acres of corn per year for the worlds biggest freezer plant. These were big ears with big kernels so the equipment could process it without destroying the kernels. By the time we picked it for the plant is was well past prime table fair. But with such large acreage I got maybe 2 weeks/20 days of prime eating because the ripening varied with so many acres. That went on for 25 years. I think what stands out in my mind the most is being in the middle of a corn patch on a calm day and just being still, listening to the corn grow. This was rill irrigated so I was all through it every day. Just keeping track of where you were once it was over your head was something in 100 acres. Under the right conditions it's growing so fast it makes noise. Leaves unfolding, little popping sounds, creaky sounds, it was very cool.
Only getting Bicolor corn right now in NY, whitecorn maybe this week i was told at the farm yesterday, So Good , You can eat it raw!!!! I like the soak in bucket trick and on the grill too, but also the boil for 6 minutes when you start to smell it...Its Done!!!!
