Corn on the Cobb

WoW  wow WOW !  So Freaking Good.

I like corn on the cob, but I try to keep the corn off my cobb.

We have been doing elotes with grilled corn recently.   Even have a vegan elote recipe.

Love it and dig the sweet corns.

Butter, cajun spice, s & p.... roll corn in it.  throw a little oil on and then roll in grated parm and cotija crumbles. 

 

Unlike a lot of my foodie people I actually like mayo.  Easy to make.  Coating the corn in mayo will make all the spices to stick. 

 

I like my corn all dressed up sometimes, but other times all I need is a little salt and we're good to go. The way Ty Cobb would've wanted it.

 The park in my old hometown has two corn trucks that do a lot-style price structure; 1 for x; 2 for y; etc.  They make handle out of the husk and there's a shelf full of shakers.

Most Mexican 'rants here do an "Elote Loco"  fully dressed ear.

I got a little indoor grill for Fathers Day.  Garlic lime butter cornyes

We used to get local corn by the 4th of July.  Nothing is even close to being ready yet.   Im good with a little butter and salt -- we usually have so much that we get creative with the recipes.  Buy a dozen for $6 get a dozen free might not pan out this year. 

 

Soak in husks in water for an hour or 2 then throw on the outside portions of the grill while everything else is being cooked in the center.

Also, add some cherry tomatoes to the bowl of shishito peppers. Drizzle olive oil and salt.  Cook on the grill first, then eat while cooking everything else.  Unbelievably yummy.

MarkD ,I've heard it called Fireman's corn cooked that way. It's my favorite.
