First time I tried this recipe (with a few little changes here and there) it's delicious!

The changes:

I used whole wheat noodles instead of linguine, and when it was all cooked up I added sliced cooked chicken, raw sweet red pepper for a bit of crunch, and shredded chard to cut the carb to green ratio a bit higher. I used only 2 T sunflower oil instead of 6(!!!), also cooked the garlic a bit in the oil before adding the rest of the sauce ingredients to take the raw edge off, and added a T of fresh chopped ginger.

I like a lot of veggies in my pasta, but even without my changes, you should try this recipe. So freakin' good!

What's for dinner at your house?

TJ's turkey meatballs, pasta, sauce, garlic bread w/ green butter, glass of red. 

Roast turkey thighs with garlic/fresh sage/butter under the skin, green, white and red salad, and yam. I'll be happy.

Dise, your dinner sounds great, but too many things I don't eat for me to make it.

Slacker, I will have to make meatballs soon, that sounds good.

rye spaetzle, mustard braised beets, mustard greens, caraway scented pork jus

Flavors of Chocolate Banana Cream Pie
caramelized banana mousse, pie pastry,  toasted hazelnut ice cream, hot bourbon chocolate sauce

That was actually my fake dinner. My real dinner was a "trippy truffle" pizza, made with button, enoki, portobello, and oyster mushrooms. With mozzarella and fontina arugula salad and truffle oil. It was really good. (I didn't make it.)

Corned Beef and Cabbage tonight. Nothing pretty, like a slow 3 hour hot dog. Total party food.

Baked Cod, Roasted Brussell Sprouts and mashed taters is what I'm planning but I also made a Spincch/Feta and Olive Whole Wheat  calzone that looks great, just add a simple tomato soup and dinners done for tomorrow as well. The better half can decide when she gets home, I'm good either way

 

time for daddy to bake, ummm baking, hopefully still coherent when she arrives :)

hot fried chicken tonight with mac n cheese and some kinda' greens ( havent decided on that one yet ) - total comfort - got the chicken soaking in seasoned buttermilk now...

Mmmm, fried chicken! Hopefully not cooking tonight but last night I tried a new recipe from the NYT Cooking site: Cider-spiked Fish Pie...similar to Shepherd's pie w/ potatoes on top.  I used cod. It tasted alright, but visually it was probably the most unappetizing dish I've ever made.But I'm all about trying new recipes, and love that NYT site... my recipe box is huge.

Meatloaf aborted. Shrimp Fra Diablo in it's place.

Spicy. I meant to write "Fra Diavolo".

 

In a pinch I will use jar sauce. This brand's version of Fra Diavolo is pretty damn good.

Yes, I am using Botticell's right now, They're right here in Hauppauge, NY.  A micro-saucer haha. The Marinara is great as well.

I add Dry Sherry, Oregano and stuff.

That fried chicken mention above has me considering some beer-battered breasts.

I'm not working tonight.  I'll probably end up cooking twice.

Maybe a pot of sauce. A batch of choc-chip.

 

 

Beautiful sunny day here, going to grill some chicken for tacos here, too. Might make a coconut jalepeno fresh mint & oregano chimmichurri deal since fresh salsa looked weak at the store and tomatoes are out of season.

chick pea miso dashi with batata, small red beans, mustard greens & turmeric.

vegan dashi stock is made by boiling fresh kombu seaweed with watercress.

the batata is a west indian sweet potato.  the one i use has a maroon skin with a yellow flesh.

i started the dashi diet last month. it is lots of veggies and excludes grains & sugar. 

i've lost 10 lbs so far and i feel better than i have in a good long while.

I'm making chicken veggie soup with homemade egg-chive noodles tonight. I hope it's worth the extra trouble of making the noodles from scratch, will report later how it turned out. According to the recipe reviews they don't get soggy or dissolve in the soup. Not sure I trust that. Might boil them separately and just add to the bowls.

The soup is pretty much homemade chicken stock with mirepoix, yellow sweet peppers, parsley, and arugula

Black Bean Soup & Reuben Sandwiches is what's on tap tonight. It may be a good pairing. We'll see.

Dise, how was the soup?

Everything sounds and looks good :) 

I was given some fresh cut asparagus from my sons fields, so I washed it well and roasted it with balsamic olive oil, garlic and a lil lemon. Then you cut it up and make a light creme sauce from the drippings of the roasting. Boil some capellini  , add roasted asparagus and drizzle sauce over ...top with fresh grated Pecorino Ramano and yummm !
 

you can add, shrimp, chicken and sometimes I do mushrooms too, depends on mood ( except shrimp...I am allergic).

I had a strange taco today at the local frou frou taco place. Butternut squash, black beans, asparagus, very cooked mushrooms, very thinly sliced red onion. Not satisfying at all. I habituate the tacquerias and taco trucks, much better for me.

are there lots of taco trucks in eugene? 

any that serve hard shell tacos? 

The soup was good, but the noodles were a fail. Too gluey.

Did you work the dough too much?  Letting the dough proof and then letting it sit and dry is essential. 

Noodles are hit and miss unless you make them constantly.   I prefer dumplings in my soup. Same concept better success rate. 

 

Maybe I did over knead the dough, the noodles were unpleasantly chewy. I let them dry before cooking, but not to 100%.
