Merry Christmas Eve to everyone, I have been busy, busy as I'm certain all of you have as well.  I haven't started a thread in a long time but I love all the clever and diverse cooks we have here, so let's put up some pics of your Holiday cooking creations this season, and my warmest wishes for a wonderful and healthy Holiday Season to all of you. 


In our  family we celebrate Christmas , we do the seven fishes and tons of food and merriment  tonight on Christmas Eve, we all gather at my nieces ( my sister who passed, her daughter) and really do have a full on Italian/Irish ( yes, hand gestures and all ..;) ) gathering.




With each year losing more loved ones I am humbled and cherish our time together, so I will pack up the car, pick up mom at NH and am off to make Merri and Cheer , then go to Midnite Mass .  Make the most of it, and Merry Christmas to all whom celebrate Christ's birth,

Cooked up the roast tonight, with smashed taters, Caesar salad, and garlic bread!  Tomorrow going to make Shepherds pie with the leftover, per request from a homeless friend who's coming over;

Been super busy and non stop, got mom locked out of NH last nite, brought her home after curfew, set off all kinds of alarms...lol !!


  Just sitting down now from making and serving dinner...

Molasses Bourbon Ham
Sweet potato casserole
Cornbread stuffing
Homemade cranberry orange sauce
Steamed broccoli
String bean casserole with roasted peppers,mushrooms and creme sauce ( none of that mushroom soup in mine..ughh )
Apple cider  rosemary infused gravy 

Biscotti and coffee for desssert.


It was all good, no pics as I am beat tired !  Really glad they left early as I am trying to beat this bug I have ( everyone has it round here )...and resting now with all dishes done...:)

Xmas eve was sposed to be lobster and shrimp, but we never got to it lol

My daughter's birthday was on 12/18, so she and her mother made a "Nyan Cat" cake (wayyy too much fondant for my comfort):

It looks like people had good fun. I did, too, but no pics.

I made christmas eve dinner for my oldest friend in Eugene (44 years) whom we scooped up when he was tragically widowed 11 years ago. We fed him and made sure he was able to go on. One of the things we did was to have him over for christmas eve dinner, a tradition I've continued without Greg. This year I made a grilled southwestern-inspired pork tenderloin, grilled yams, perfectly steamed broccoli and a light and simple green salad for which he made the dressing. It was a perfect meal, simple and delicious. My friend said a couple of times that it was the best meal he's had in the last few months, including eating in restaurants. He doesn't just say things, and it was that good to my taste, too. We finished by sharing delicious chocolates that came as a gift from afar. It was lovely. I wish I taken pics to post on this thread, you guys have done such good work!

Thanks Sarah, not sure what a Mcgriddle is but they are an Italian cookie called pizzelle :)  I am packaging up a bunch today and making jam for DSO on NYE , they really look forward to my homemade goodies and it makes me feel good to see them enjoy .  We are planning my cousins wake for Sat and I am making food for that also....so tragic !  Busy, busy !

I made Shrimp cocktail appetizer, chicken Parmesan and a Cannoli cake and my Ex's XMAS cookies for desert.  A dinner for 6 & I did it all.  The party ended at 8:30. Took a 2 hour brake and cleaned up a major mess by my self.

Just made Scotcheroos for the first time in many many years, Yum!!!

Recipe; 1 cup sugar / corn syrup / peanut butter. Melt the sugar into the corn syrup on medium-low heat until the crystals are gone, should solidify as a clear drip off the wooden spoon. Turn off heat and add the creamy peanut butter. Mix, then fold in ~ 6 cups Rice Crispies. Lay out on parchment paper. Melt the semi-sweet chocolate and butterscotch morsels on a double boiler (I used a bowl over a pot of simmering water). DO NOT GET WATER IN THE CHOCOLATE MIXTURE!!!. Cover the roos w/ chocolate mixture and enjoy. If the sugar mixture isn't hot enough, they'll fall apart, too hot and they'll be rock hard, sorry, but I can't remember the actual temps
