I'll take both the sabret style onions and the raw onions on top.
My recipe: 2 Sliced onions, half can of tomato paste, couple table spoons of white or rice wine vingar, scoop of brown sugar, few squirts of ketsup, shake of garlic powder, dash of onion powder, teaspoon of paprika, salt, pepper,3 palm hits to the bottom of a franks red hot bottle and 1/4 cup of water.
My Hot Dog Red Onion recipe is Sabret's. Sabret now sells the hot dog onions in a bag, just like their sauerkraut. Quick heat & go. Just add more red pepper flakes.
Anyway, I like the 'Two for two bucks" 7-11 hot dogs.
I don't actually eat them (maybe a couple bites) but the bun goes in the compost, and the chili cheeze dogs w/ Kraut, no Omion get parsed into the Dawg-Food bowl over time.
It's actually a lot of high-quality 'meat by-product' material and the Hound loves a few teaspoons mixed w/ the Kibble. The molten Cheeze & Chili really have the aromatics Dawgs like.
I think that I was a bit foggy regarding 7-11 hot dog pricing. Two bucks gets you a 'Big Gulp' soda and one Chili Dog. The beauty of it all is the 'Fixins Bar'.
Relish, chopped Omion, Pickles, and the incredible heated Chili & Cheeze pump dispenser. There are even Cholula Hot Sauce packets.
Haha I remember the name because as a kid, Mom would only get us Sabrett brand when in the city. Something about a higher-quality grade of ground rat snouts compared to other vendors.
I've never heard of "hot dog onions" other than just chopped up white or yellow onions. I've also never seen a hot dog cart that I can remember, so that must be why I've never heard of "hot dog onions".
One time at a barbecue when I was about 8 or 10 my mother asked me to get her a hot dog. I asked what she wanted on it, she said everything. I had never seen catsup on a hot dog but since she wanted everything I put catsup on it. When I gave it to her she took one look at it and made a shocked face. She got up, scraped the catsup (with everything else) off, and put the everything she wanted: chopped onions, mustard and pickle relish. She wasn't mad, just couldn't understand why someone would put catsup on a hot dog.
Eugene used to have some interesting food carts over by campus, never realized the Hot Dogs were unrepresented. I'm thinking 'Get Fried Rice' and a tofu something, I forget. I can't even recall the name of the old Ice Cream place that turned into another restaurant.
NYC always had hot dog carts from earliest memories, and also roast chestnut carts in Winter. There are many more choices now compared to the 70's.
Kraut & dark mustard for me. The chili-cheeze are for the Dawg.

That recipe is close to what we do. I don't use the tomato paste. Use ketchup instead of chili sauce . It always tastes great!

If you're doing onions, It's worth the time and effort to properly caramelize them.
