Had a party last weekend and made a Pho stock and had a 'noodle bar' setup. Home pickled veggies(daikon has to be the most perfect veggie to pickle), raw veggies, 3 made sauces, pork belly etc... Turned out great as everyone could add exactly what they wanted. Definitely something I'd do again. The key was cooking that stock for 30 plus hours.
