This was always something I looked forward to.  I'll be in Mexico watching the Eagles fly eating god knows what and drinking some tequila,  but Id love to see some good recipes.  What are you guys throwing down?

Game Day? What is this Game Day?

If it's Sunday, I have a date with a friend and a wine bottle. Maybe a wine bottle and a friend.

Mexico is technically work but I am blessed with a job that is generally fun :)

I wish I was going to be home with my dog but someone has to be the adult in charge around here.

I will be relating to our guests that stayed to have a Mexican Super Bowl, handing out tissues to the Pats fans :)

Heat up grape jelly and chili sauce then add kielbasa/little smokies or meatballs. Crowd favorite every time.

Deep frying some chicken (boneless breast tenderloins) and serving with blue cheese dip from Wings and Rings.

Buffalo Wings and Rings blue cheese recipe - 

SAUCE

• 6 ounces (3/4 cup) cream cheese

• 1 ounce port wine

• 2 cups mayonnaise

• 1/3 cup crumbled blue cheese

Soften cream cheese in the bowl of a stand mixer. Add wine and mayonnaise. Using the paddle blade of the mixer, combine all ingredients, scraping sides of bowl frequently.

Remove bowl, and using a wooden spoon or stiff spatula, stir in the blue cheese so as no to break up the chunks. Refrigerate.

Makes approximately 3 cups dipping sauce, or enough for approximately 24 buffalo wings.

 

I'd Like To Make My MoMs Chalupa with Fritos .... But Too much Work.............

So many great finger foods,  one fave,  

stuff a chestnut (or cashew) into a date, and wrap in bacon, bake...  yum!   (can add a glaze, etc)

Dry rub already on the ribs.  Will either bake or slow-cook.

No shits to give about the game, but we are have staging a "Subpar Bowl Jam" pregame.

Gonna try a few tunes for the first time.  Maybe even run through the changes first, for the benefit of the pianaplayah.

Costco shrimp platter is bad ass but passing on it for superbowl party since we got it for the AFC championship game party.

Buffalo chicken meatballs

Ground chicken, diced celery and carrots, egg, some breadcrumbs or whatever. After baking toss em with some Frank's or you favorite sauce. Dip in ranch or blue cheese dressing

Pork shoulder and ribs are getting smoked now, Hooter's wings and an assortment of stuff to throw into the fryer. Also going to bake some marinated brocolli and brustle sprouts

I got some chicken taquitos down at wal-mart-   I'll make some GUAC also

I normally don't celebrate or party - but I'll have guests today.

Guess I better pick up some beer.

 

I wasn't going to cook anything today but plans change. I still have no plans to watch the game.

I froze whole ripe tomatoes from my garden, in their skins (the easiest way to preserve fresh flavor, though not structural integrity). They're a breeze to peel under running water while frozen. I'm going to roast them with olive oil and whole garlic cloves - the water will rise in the pan and shortly after it evaporates the shoulders of the now-sunken tomatoes will be a beautiful roasted brown and the tomato flavor will be deep and concentrated. I'll serve them with homemade pesto made using basil I grew, and (whole wheat) tortillas.

I'll also cook chicken thighs on the grill, but have to figure out what kind of marinade I want to make. This meal, along with veggies, is sounding good.

I fell here & sprained my knee before a concert the other night and then it got much worse overnight. So I have to pace myself. I'm in pain...

Yesterday I went did a bunch of shopping (5 days worth) only to realized I have a bunch of Italian Sausage that needs to be cooked right now.

So Fresh Italian Sausage and spaghetti & Marinara was this game-day decision. Plus Cesar salad?

Hot Pretzels, Organic Stout and cheddar cheese and townhouse crackers prior.

pretty simple here, dairy and grain free zone in this house....

Plantain chips with simple guac (just avocado cilantro and lime) and a mango salsa (just mango,lime, red onion, fresh jalapeno, fresh red pepper and cilantro)

paleo taco salad:  seasoned browned ground elk over kale with a simple ACV dressing and standard taco veg.

This one always goes over well. There's some weird ingredients that I normally wouldn't touch with an eleven foot pole, but they really work so I'm not messing up a good thing!
