Been watching this guy and others for years. I like this guy because he produces high quality vlogs from interesting locations. Plus it's not only about food to me but a travel vlog too. Ethiopia is on my bucket list.
I watch a lot of chefs on YouTube.
Lately it's been various Indian food. Also Chinese. I don't really ever follow any recipe too closely , but use as confirmation for ingredients and technique.
Been into making saag paneer. I recently made one with spinach and broccoli rabe with a pinch of frozen peas tossed in and blended smooth. So good.
I LOVE this lady's cooking videos on youtube, and I don't even speak Spanish. She uses a very primitive wood-fired stove so her methods are usually very no-nonsense and simple (she does bring a blender now and then so it's not really like caveman cooking). Whenever I feel like I need a spiritual grandmother mood boost she's my go-to.

Lastly, Jacques Pepin Jacques Pépin: Essential Techniques (English with a pronounced French accent) whenever I'm in a pinch and need a refresher course on a culinary technique.
LLOLLO- De mi Rancho a Tu Cocina is so comforting, perfect for bad weather! I've stolen a lot of technique from her with fantastic results. I recall you love a good paella so you're going to enjoy the Spanish cooking youtube, he has so many authentic and simple prep comfort food recipes.
Slightly off-topic I've been spending a lot of grocery money at this place lately: https://laespanolameats.com/ The dried Nora Pepper flakes are an incredible "secret ingredient"and less than $5. They have Sherry and Vermouth vinegar which I use for certain recipes, and carry Pato Negro Iberico Jamon in small portions. Their store brand Chorizo is To. Die. For. I put it in my gumbo recipe instead of andouille b/c the store sent me chorizo as a bonus for spending $99 there and I had to use it up. It was AMAZING. Anyhow, you should check it out if you like rainy day window shopping.

I peaked at the Spain on a Fork -- love that he is leading w/ the concept of peasant food -- those are the deceivingly simple but yummiest dishes from an umami angle.
